Erin serves as Executive Assistant at BEST NC, supporting the organization’s work to strengthen education across the state. Education has always been at the heart of how Erin sees the world — as a former art teacher, a PTA president, and most importantly, as a parent of two children in North Carolina public schools. She believes every child deserves access to creativity, nourishment, and a community invested in their growth, and that belief shapes everything she does.
Erin’s path here wasn’t a straight line. She studied Art and Psychology at Elon University before finding her way into Sustainable Farming, and later earned a Master of Science at Meredith College in Human Nutrition, becoming a Licensed and Registered Dietitian Nutritionist. Along the way, she’s come to see education, food, and creativity as deeply connected — each one a way of caring for the people around us.
Outside of school hallways and PTA meetings, you’ll find Erin tending her garden, working on a craft project, lacing up for a run, or planning her next trip. Whether she’s in the classroom, the kitchen, or her community, she’s driven by the same idea: when we invest in how kids learn, eat, and grow, we’re investing in the future of our whole community.
